More cupcakes



Bonnie Butter Cake
1-3/4 cups sugar
2/3 cup margarine or butter, softened
2 eggs
1-1/2 teaspoons vanilla
2-3/4 cups all-purpose flour
2-1/2 teaspoons baking powder
1 teaspoon salt
1-3/4 cups milk

Heat oven to 350ยบ. Mix sugar, margarine/butter, eggs and vanilla until fluffy. Beat on high speed, scraping bowl occasionally, 5 minutes. Beat in flour, baking powder and salt alternately with milk on low speed. Pour into pan(for cupcakes, into paper-lined cups, 2/3 full).
Bake until wooden toothpick inserted in center comes out clean, about 20 minutes for cupcakes.


Chocolate Butter Frosting
1/3 cup margarine or butter, softened
2 ounces unsweetened melted chocolate (cool)
2 cups powdered sugar
1-1/2 teaspoons vanilla
About 2 tablespoons milk

Mix margarine/butter and chocolate. Stir in powdered sugar. Beat in vanilla and milk until frosting is of spreading consistency.

I dunno. They turned out alright, but seem kind of bland to me. And just something about them seems off. Jessie likes them though. I'm going to try to the chocolate chip ones next, and hopefully pick up a new cookbook in Portland. This one just isn't doing it for me.
